Combine warm water, sugar, and yeast in a large bowl. Allow to rest for 5 to 10 minutes until the surface becomes foamy.

Incorporate flour, salt, and olive oil into the yeast mixture. Stir to combine until a shaggy dough forms, then knead by hand for 5 to 7 minutes until smooth and elastic.

Cover the dough with a clean towel. Place in a warm environment and let it rise for 45 to 60 minutes until doubled in volume.

Set the oven to 220°C (425°F). Line a baking sheet with parchment paper.

Roll the dough into a rectangle measuring approximately 23 cm by 33 cm. Transfer it onto the prepared baking sheet.

Brush the surface evenly with melted butter. Sprinkle minced garlic and Italian seasoning, followed by shredded mozzarella and optional cheddar or Gruyère cheese.

Bake in the preheated oven for 12 to 15 minutes until the cheese melts completely and edges turn golden brown.
