→ Other

18 - 1 tbsp oil
19 - 2 tbsp cornstarch or arrowroot flour

# Guide to Cooking:

01 - Heat oil over medium heat in a pan. Add diced onion and sauté for 2 to 4 minutes, stirring frequently until translucent.
02 - Incorporate diced carrots, chopped potatoes, sliced celery with greens, minced garlic, and all herbs and spices. Sauté for an additional minute, then pour in the vegetable broth.
03 - Bring mixture to a boil over high heat. Reduce to low-medium heat and cook for 5 minutes.
04 - Stir in frozen peas and simmer for 15 more minutes, or until all vegetables are tender, stirring occasionally.
05 - Whisk cornstarch together with the dairy-free heavy cream or canned coconut milk in a small bowl until smooth.
06 - Pour the cream mixture into the stew along with white wine (or extra broth for a milder flavor) and let simmer for 3 to 4 minutes to thicken.
07 - Taste and modify seasoning with additional salt, pepper, or spices as desired. For a creamier texture, blend half of the stew using an immersion blender.
08 - Garnish with fresh herbs if preferred and serve warm. Refrigerate leftovers covered for up to 3 days or freeze for longer storage.

# Extra Suggestions:

01 - Adjust herbs and spices according to personal taste. Homemade vegetable broth enhances flavor depth. Coconut milk is a suitable substitute if dairy-free cream is unavailable. Frozen peas may be replaced with green beans or corn.
