Hearty Pasta Fagioli Soup (Printable Version)

A robust Italian stew with pasta, beans, bacon, and sausage, simmered in a rich tomato broth.

# Ingredients Required:

01 - 15 ml olive oil
02 - 43 g thick-cut bacon, diced
03 - 454 g Italian sausage, crumbled

04 - 3 medium carrots, peeled and diced
05 - 5 medium celery stalks, diced
06 - 2 small-medium onions, peeled and diced
07 - 4 cloves garlic, peeled and minced

→ Seasonings and Liquids

08 - 30 ml tomato paste
09 - 1 tablespoon Italian seasoning
10 - 0.5 teaspoon garlic powder
11 - 120 ml red wine
12 - 680 g canned tomato sauce
13 - 425 g canned diced tomatoes
14 - 1.18 liters chicken broth
15 - Salt and black pepper to taste

→ Pasta and Legumes

16 - 120 g dry Ditalini pasta
17 - 425 g canned dark red kidney beans, rinsed and drained
18 - 425 g canned white cannellini beans, rinsed and drained

→ Garnishes

19 - Grated parmesan cheese (optional)
20 - Chopped parsley (optional)

# Guide to Cooking:

01 - Heat olive oil in a large Dutch oven over medium-high heat. Add diced bacon and cook until browned, about 3 to 4 minutes. Add crumbled Italian sausage and continue cooking until browned, about 4 to 5 minutes.
02 - Add diced carrots, celery, onions, and minced garlic to the pot. Cook until vegetables begin to soften, about 4 to 5 minutes.
03 - Stir in tomato paste, Italian seasoning, and garlic powder until combined. Pour in red wine and cook, scraping browned bits from the bottom, for 1 minute.
04 - Pour in tomato sauce, diced tomatoes, chicken broth, and season with salt and black pepper. Bring mixture to a boil, then reduce heat to low and cover. Simmer for 15 to 20 minutes.
05 - Stir uncooked Ditalini pasta into the soup and cook uncovered for 10 minutes. Add rinsed kidney and cannellini beans, stir through, and simmer for an additional 4 to 5 minutes until pasta is tender and beans are heated through. Add extra broth if necessary. Serve immediately, garnished with parmesan and parsley if desired.
