Preheat the oven to 350°F (180°C).

In a large bowl, whisk together 4 eggs. Season with salt and black pepper to taste.

Heat a medium skillet over medium heat. Cook the whisked eggs until set, flipping to cook both sides, then fold each portion into a square shape.

Repeat the whisking, seasoning, cooking, and folding process with the remaining 4 eggs.

Slice each croissant in half horizontally. On the bottom half, layer one slice of ham, one folded egg square, and one slice of cheese. Cover with the top half.

Line a baking sheet with parchment paper and place the assembled croissants on it. Bake in the preheated oven until the cheese is fully melted and the ham is warmed through.

Remove croissants from the oven and serve warm.
