                In a medium bowl, combine the crushed graham crackers, sugar, salt, and cinnamon if using. Add melted butter and vanilla if using, stirring until the crumb mixture is fully coated.

                Evenly spread the crumb mixture on the prepared baking sheet. Bake for 8 to 12 minutes until lightly golden and fragrant, monitoring closely to prevent burning. The mixture will be soft when removed but will crisp upon cooling.

                Allow the crumble to cool to room temperature, then break into pieces. Store in an airtight container for up to 3 days at room temperature, 7 days refrigerated, or 3 months frozen. Bring to room temperature before use.
