Buttery Steak Pieces (Printable Version)

# What You'll Need:

→ Main Ingredients

01 - 2 lbs beef cuts (your pick: filet, ribeye, or sirloin)
02 - 4-5 tbsp avocado oil for cooking

→ Parmesan Cream Sauce

03 - 5 tbsp butter, split up
04 - 10 garlic cloves, chopped and split
05 - 1.5 cups heavy cream
06 - 2 sliced green onions (use both parts)
07 - 1 tsp chili flakes
08 - 2/3 cup any form of parmesan cheese

→ Cheesy Mashed Potatoes

09 - 4 lbs russet potatoes
10 - 1 cup warm half and half
11 - 6 tbsp melted salted butter
12 - 3/4 cup shredded monterey jack
13 - 1 tsp garlic powder
14 - 3/4 tsp salt
15 - 1/2 tsp black pepper, adjust as needed

→ Homemade Blackened Seasoning

16 - 2 tbsp smoked paprika
17 - 1 tbsp cayenne pepper
18 - 1 tbsp onion powder
19 - 2 tsp garlic powder
20 - 1 tsp ground black pepper
21 - 1 tsp salt
22 - 1/2 tsp dried thyme
23 - 1/2 tsp dried oregano

# How to Make It:

01 - Chop your beef into chunks about 2-3 inches big. Coat evenly with the oil and blackened spice mix. Let it rest 10-15 minutes. Peel your potatoes and cut into quarters. Give them a good soak in cold water for 10 minutes to wash away extra starch, then drain them well.
02 - Warm up 2-3 tbsp avocado oil in a big skillet on medium-high. Don't touch the steak chunks for 2 minutes, then flip once and wait another minute. Turn down the heat, cook one more minute, then put the steak in a bowl. Using that same pan, melt 3 tbsp butter with 1 tbsp of your chopped garlic until you can smell it. Mix the steak in this garlic butter, cook another minute, then take it out and cover with foil.
03 - With the same pan, melt 2 tbsp butter and the leftover chopped garlic until it smells good. Gently whisk in your cream and let it bubble. Cook it down for 3-5 minutes. Toss in the chili flakes, green onions, and parmesan. Keep whisking until it gets thick. Add salt and pepper to make it taste right.
04 - Dump out the water from your potatoes, add the melted butter and warm half and half, then mash them till they're smooth. Stir in the monterey jack, garlic powder, salt, and pepper.
05 - Scoop the mashed potatoes onto plates, add the steak bites on top, and drizzle with the parmesan sauce. Eat right away while hot.
