Trim skirt steak to fit skillet dimensions. Pat dry thoroughly. Season both sides evenly with salt and black pepper.

Heat a large skillet over medium-high heat until very hot. Add a small amount of oil if desired. Sear steak for 2 to 3 minutes per side for medium-rare or adjust time to preferred doneness. Transfer cooked steak to a plate and allow to rest to retain juices.

In a separate skillet, melt butter over low heat. Add minced garlic and stir constantly with a spatula until garlic becomes golden brown. Immediately remove from heat to prevent burning and transfer to a bowl.

Slice rested steak thinly against the grain. Drizzle garlic butter over the slices. Garnish with chopped fresh parsley and serve promptly.
