Combine warm water and sugar in a large bowl. Sprinkle yeast on top and let stand 5–10 minutes until foam appears.

Add flour, salt, and olive oil to the yeast mixture. Stir until a shaggy dough forms, then knead on a floured surface for 8 minutes until smooth and elastic.

Transfer dough to a greased bowl, cover, and allow to rise in a warm area for 1 hour until doubled in volume.

Deflate dough and divide into 12 to 14 portions. Roll each piece into a rope and arrange on a parchment-lined baking sheet.

Let shaped dough rest for 20 minutes to rise. Meanwhile, combine melted butter, minced garlic, and garlic powder.

Brush half of the garlic butter mixture over the breadsticks before baking.

Bake in a preheated oven at 190°C for 15–18 minutes until golden brown.

Brush remaining garlic butter over hot breadsticks and garnish with parsley or mozzarella if desired. Serve immediately.
