Muffin Morning Pizza (Printable Version)

# What You'll Need:

→ Base

01 - 4 English muffins, cut in half

→ Egg Mixture

02 - Add salt if you'd like
03 - Some ground black pepper (however much you want)
04 - 4 big eggs
05 - 60 ml cream or whole milk

→ Toppings

06 - 30 g fresh arugula or spinach (optional)
07 - 6 cherry tomatoes, slice in half for the top (optional)
08 - 80 g sausage or cooked bacon, broken up
09 - 80 g mozzarella or cheddar cheese, shredded

→ For Cooking

10 - 10 ml unsalted butter or olive oil

# How to Make It:

01 - Once they're out, just dig in while everything's still warm.
02 - Slide your tray to the middle rack and bake 5 to 7 minutes so that the cheese ends up gooey and super melty.
03 - Now go ahead and pile some scrambled eggs on each muffin. Sprinkle shredded cheese all over, drop on sausage or bacon, then add cherry tomatoes and a handful of greens if you’d like.
04 - Lay out each golden muffin half, cut side facing up, over your lined baking tray.
05 - Grab a bowl, crack in the eggs, pour in milk or cream, toss in salt and pepper. Beat it up with a whisk. Melt butter or heat up oil in a nonstick pan over medium heat, then cook the eggs, stirring around till just soft.
06 - Stick your split muffins under the grill or in the toaster so they turn lightly crisp and browned.
07 - Kick your oven on and heat to 200°C.

# Additional Tips:

01 - Try whole wheat muffins if you want more fibre. Toss in mushrooms or bell peppers on top for a veggie boost.
