Easy Sweet Potato Egg Bake (Printable Version)

01 - 120 ml avocado oil
02 - 1/2 large yellow onion, chopped
03 - 1 green bell pepper, chopped
04 - 700 g cubed sweet potatoes
05 - 3 garlic cloves, minced

06 - 450 g turkey sausage
07 - 10 large eggs

08 - 120 ml milk
09 - 60 g grated mozzarella cheese

10 - 1 teaspoon dried thyme
11 - 1 teaspoon salt
12 - 1/2 teaspoon black pepper

# Guide to Cooking:

01 - Set oven temperature to 190°C (375°F) to prepare for baking.
02 - Heat avocado oil in a large skillet over medium heat. Add chopped onion and green bell pepper, cooking until softened, approximately 5 minutes.
03 - Incorporate cubed sweet potatoes and minced garlic into the skillet. Cook until sweet potatoes begin to soften, about 10 minutes.
04 - Add turkey sausage to the skillet, breaking it apart with a spoon. Cook until browned throughout, around 8 minutes.
05 - In a large bowl, whisk together eggs, milk, dried thyme, salt, and black pepper until fully combined.
06 - Pour the egg mixture evenly over the sweet potato and sausage blend in the skillet. Stir gently to integrate.
07 - Evenly sprinkle grated mozzarella cheese over the top of the mixture.
08 - Transfer the skillet to the preheated oven. Bake uncovered for 30 to 35 minutes, until eggs are set and cheese is melted with a golden crust.
