Whisk together honey, Dijon mustard, olive oil, soy sauce, lemon juice, and minced garlic until smooth.

Place chicken breasts in a resealable plastic bag or shallow dish, pour marinade over them, seal tightly, and refrigerate for at least 30 minutes or up to 4 hours.

Heat grill to medium-high, approximately 190°C.

Remove chicken from marinade, discard any leftover marinade, and grill for 6 to 7 minutes per side until golden brown and the internal temperature reaches 74°C.
