Heat olive oil in a large frying pan over medium-high heat. Add cooked gnocchi and cook without stirring for 2 to 3 minutes until golden and crispy on one side.

Stir gnocchi gently and continue cooking for another 2 to 3 minutes until crispy on all sides.

Reduce heat to medium; add minced garlic and sauté for about 1 minute until fragrant, avoiding burning.

Add fresh spinach and stir gently for 2 to 3 minutes until wilted.

Season with salt, black pepper, and optional red pepper flakes. Remove pan from heat and stir in crumbled feta cheese until well combined. Serve immediately.
