Set the oven temperature to 190 degrees Celsius (375 degrees Fahrenheit) and allow it to fully preheat.

Combine eggs, all-purpose flour, whole milk, sugar, salt, and vanilla extract in a blender. Blend until smooth, or whisk thoroughly by hand.

Place unsalted butter in a 25 cm cast iron skillet or oven-safe baking dish. Heat in the oven until butter is completely melted. Carefully remove from oven, pour in the batter, and return the skillet immediately to the oven.

Bake for 20 minutes without opening the oven door until the pancake is puffed and golden at the edges.

Remove from oven, dust with confectioners’ sugar, and garnish with lemon wedges and mixed berries or jam as desired.
