In a mixing bowl, combine mashed potatoes, shredded cheese, egg, salt, black pepper, paprika if using, and flour. Mix until a soft, non-sticky dough forms.

On a floured surface, roll out the dough to approximately 1.25 cm thickness. Cut into sticks roughly 7.5 cm long and 1.25 cm wide.

Roll each dough stick evenly in breadcrumbs to ensure full coating.

Heat oil in a frying pan over medium heat and fry the sticks for 2 to 3 minutes on each side until golden and crispy. Alternatively, arrange on a baking tray, spray lightly with oil, and bake at 200°C for 20 to 25 minutes, turning halfway through.

Remove the sticks and drain on paper towels. Serve warm accompanied by your choice of dipping sauce.
