01 - 6 hard-boiled eggs, chopped
02 - 120 ml mayonnaise (optional: kewpie mayonnaise)
03 - 7.5 ml sriracha
04 - 10 g shredded mozzarella cheese
05 - 2 teaspoons (about 2 g) chopped fresh chives
06 - Kosher salt, to taste
07 - Freshly cracked black pepper, to taste

→ To Serve

08 - 1 slice bread, toasted
09 - Avocado, sliced or mashed
10 - Jalapeño slices, to garnish
11 - Olive or avocado oil cooking spray

# Guide to Cooking:

01 - In a bowl, combine chopped hard-boiled eggs with mayonnaise, sriracha, chopped chives, shredded mozzarella, kosher salt, and cracked black pepper. Mix thoroughly until well incorporated.
02 - Heat a nonstick skillet over medium-high heat and lightly spray with olive or avocado oil cooking spray. Place approximately 60 ml (1/4 cup) of the egg mixture in the skillet. Cook for 1 to 2 minutes until the bottom is golden and crispy, then carefully flip and cook for an additional minute. Avoid overcooking to prevent excessive melting of cheese and difficulty in handling.
03 - Toast a slice of bread and add a layer of sliced or mashed avocado. Top with the warm crispy egg mixture and garnish with jalapeño slices. Serve immediately for best texture and flavor.
