In a large bowl or sealable bag, combine chicken wings with peanut oil, Shaoxing wine, light soy sauce, ground ginger, sugar, salt, garlic powder, and white pepper powder. Massage thoroughly for even coating. Refrigerate for a minimum of 2 hours or preferably overnight to maximize flavor.

Set the air fryer temperature to 176°C and allow it to preheat for approximately 5 minutes.

Drain the marinated wings and pat dry with paper towels. In a separate bowl, combine cornstarch and all-purpose flour. Toss the wings in the dry mixture until completely coated.

Place coated wings in a single layer inside the air fryer basket, avoiding overcrowding. Lightly spray the wings with oil to enhance crispness.

Cook for 12 to 15 minutes at 176°C. Halfway through, pause to flip the wings for uniform browning. Adjust time according to wing size and air fryer performance.

Remove the wings from the air fryer and serve hot with preferred dipping sauces.
