Pea Bacon Pasta (Printable Version)

# What You'll Need:

→ Main

01 - 1/4 cup fresh parsley, chopped
02 - 1 cup frozen peas, thawed
03 - 1/2 cup sharp cheddar cheese, diced
04 - 1/2 cup red onion, finely diced
05 - 1 pound rotini or shell pasta
06 - 8 slices bacon, cooked crisp and broken up

→ Dressing

07 - Salt, to taste
08 - 1 tablespoon Dijon mustard
09 - Black pepper, to taste
10 - 1 cup mayonnaise
11 - 1/2 cup sour cream
12 - 1 tablespoon apple cider vinegar
13 - 1 teaspoon sugar

# How to Make It:

01 - Fill a big pot with water and some salt and get it boiling. Toss in your pasta and cook it till just firm, following the directions on the box. Dump it in a strainer, rinse under cold water right away, then let it sit.
02 - Grab a big bowl and toss in the mayo, sour cream, Dijon, vinegar, sugar, salt, and pepper. Stir everything together till it looks nice and smooth.
03 - Take your cooled pasta and drop it into the bowl with your dressing. Gently mix it all around till every bit gets covered.
04 - Now add in the peas, crumbled bacon, diced onion, cheddar bits, and parsley. Give it all a quick stir so everything’s mixed but don’t go overboard.
05 - Pop a lid or some wrap on the bowl and stick it in the fridge for at least an hour so all those flavors soak in. Dish it out cold when you’re ready.

# Additional Tips:

01 - If you want maximum flavor, put it together a couple hours before you eat. Chilling helps all the good stuff soak in.
02 - After sitting in the fridge, if things dry out, just mix in an extra dollop of mayo or sour cream.
