# Guide to Cooking:

01 - Pound chicken breasts evenly to approximately 1.27 cm thickness, then season both sides with salt and freshly ground black pepper.
02 - Heat 1½ tablespoons olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5 to 6 minutes per side until no longer pink inside and internal temperature reaches 74°C. Remove chicken and keep covered on a plate.
03 - Return skillet to medium-high heat and add remaining ½ tablespoon olive oil. Stir in chopped shallots and minced garlic; cook until fragrant, about 1 minute.
04 - Gradually pour in chicken broth while scraping browned bits from the skillet bottom. Bring to a gentle boil and simmer until liquid reduces to approximately 80 ml, about 10 minutes.
05 - Reduce heat to medium, whisk in heavy cream. Add butter cubes gradually, stirring until each is completely melted. For a richer consistency, add remaining butter.
06 - Stir in chopped cilantro, chipotle pepper, and optional adobo sauce. Season sauce with salt and pepper to taste.
07 - Return chicken to skillet, warming through for 1 minute off the heat. Garnish with additional cilantro and serve alongside fresh lime wedges.
