Preheat a grill, grill pan, or heavy skillet over medium heat. Place patties on hot surface and cook until desired doneness, flipping once. For medium-rare, cook to an internal temperature of 130–135°F (54–57°C); for medium, cook to 140–145°F (60–63°C); for well-done, cook to 160°F (71°C). Avoid pressing down on patties to retain moisture. Let burgers rest a few minutes before serving.
