# Ingredients Required:

06 - 120 g baking soda

→ Coating

07 - 115 g unsalted butter, melted
08 - 200 g granulated sugar
09 - 14 g ground cinnamon
10 - Flaky sea salt (optional)

# Guide to Cooking:

01 - Combine warm water, granulated sugar, and active dry yeast in a bowl. Let sit for 5 minutes until frothy.
02 - Add all-purpose flour and salt to the yeast mixture. Stir until a cohesive dough forms.
03 - Knead on a floured surface for 5 minutes until the dough is smooth and elastic.
04 - Place the dough in a greased bowl, cover it, and allow to rise for 30 minutes or until doubled in size.
05 - Bring water and baking soda to a rolling boil in a large pot.
06 - Punch down risen dough, divide into portions, roll into ropes, and cut into bite-sized pieces.
07 - Boil each piece in the baking soda bath for 30 seconds, then transfer to a parchment-lined baking tray.
08 - Brush boiled pieces with melted butter, then roll in the cinnamon-sugar mixture evenly.
09 - Bake at 220°C for 12 to 15 minutes until golden brown.
10 - Allow to cool slightly before serving to enhance texture and flavor.
