Cut the beef against the grain into thin strips about 1/2-inch thick for extra tenderness.

Combine soy sauce, sugar, cornstarch, and ginger in a bowl and stir until everything's well mixed and sugar's completely dissolved.

Drench the beef strips in the sauce mixture, making sure each piece gets fully covered.

Warm up 1 tablespoon vegetable oil in a hot wok or big frying pan. Cook beef in small batches, turning often until brown (about 3 minutes). Put cooked meat in a bowl on the side.

Put the cooked beef back in the wok and toss in the red onion. Cook together for roughly 2 minutes until onions start to get soft.

Add green bell pepper and keep cooking for another 2 minutes until peppers turn bright and slightly tender.

Drop in tomato wedges and gently mix everything together so the flavors blend well.
