Fire up your oven to 375°F (190°C). Dry off the chicken then hit both sides with a good shake of salt and black pepper.

Pour the olive oil into a big skillet on medium-high. Add the chicken and let it brown for 3 to 4 minutes per side. Don't skip the crust.
