Preheat the oven to 175°C. Line two baking sheets with parchment paper.

Whisk together the flour, baking powder, baking soda, and salt in a medium bowl. Set aside.

Using an electric mixer on high speed, cream the softened butter and 200 g sugar together for 1-2 minutes until light and fluffy.

Mix in the egg and vanilla extract on medium speed for 1-2 minutes until pale and very fluffy.

Add the dry ingredient mixture gradually, mixing on low speed just until combined.

Scoop dough by two tablespoons, roll into balls, then coat each in the reserved sugar.

Place dough balls at least 5 cm apart on the prepared baking sheets. Slightly flatten and shape into circles.

Bake 6 to 8 cookies at a time in the preheated oven for 9-10 minutes.

Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before serving.
