Heat the olive oil in a large deep skillet over medium-high heat. Add the mushrooms, chopped onions, and kosher salt. Sauté, stirring occasionally, until mushrooms release their liquid and it mostly evaporates, approximately 10 minutes.

Incorporate the minced garlic, black pepper, and dried thyme. Stir and cook for an additional minute, then remove from heat.

Transfer the mushroom mixture to the prepared baking dish. Evenly sprinkle shredded Gruyere cheese over the top.

Bake uncovered for about 15 minutes until hot and bubbling. Remove from oven, sprinkle with dried parsley, and serve immediately.
