Preheat the oven to 175°C.

Prepare the basmati rice according to package instructions and set aside.

Combine cottage cheese and buffalo sauce in a blender or food processor. Blend until smooth.

Heat olive oil or spray a large skillet over medium heat. Add diced onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.

Reduce heat to low. Add shredded chicken, cooked rice, and blended cottage cheese mixture to the skillet. Stir to combine evenly. Season with salt and black pepper to taste.

Evenly spread the mixture in the skillet or transfer to a casserole dish. Sprinkle shredded cheddar cheese over the top.

Place in the preheated oven and bake for 15-20 minutes until the cheese is melted and bubbly.

Remove from oven and serve warm. Optionally, garnish with extra blue cheese or ranch dressing and chopped green onions.
