Beef Tortellini with Enchilada Cheese (Printable Version)

# What You'll Need:

01 - 1 lb ground beef
02 - 1 (19 oz) pack cheese tortellini, fresh or frozen
03 - 1 (10 oz) can red enchilada sauce
04 - 1 cup grated cheddar cheese
05 - 1/2 cup grated Monterey Jack cheese
06 - 1 small onion, chopped
07 - 1 teaspoon cumin
08 - 1/2 teaspoon chili powder
09 - 1/2 teaspoon garlic powder
10 - 1/2 teaspoon salt
11 - 1/4 teaspoon black pepper
12 - Fresh cilantro or green onions for topping

# How to Make It:

01 - Cook your tortellini based on the package info. Drain them and put aside.
02 - Using a large skillet on medium heat, cook your ground beef with the chopped onion until meat isn't pink and onions get soft. Pour off extra grease.
03 - Add your cumin, chili powder, garlic powder, salt, and pepper. Pour in enchilada sauce and add the cooked tortellini. Mix everything gently.
04 - Scatter both cheddar and Monterey Jack on top. Put the lid on your skillet and cook for 3-5 minutes till cheese gets all melty.
