White Chicken Cajun Chili (Printable Version)

01 - 3 tbsp vegetable oil
02 - 1 pound diced chicken breasts, no skin or bones
03 - 16 ounces sliced andouille sausage
04 - 1 medium diced white onion
05 - 4 medium chopped celery stalks
06 - 1 medium chopped green pepper
07 - 1 medium finely chopped jalapeno
08 - 4 cloves crushed garlic
09 - 2 teaspoons cumin powder
10 - 1 teaspoon smoky paprika
11 - 1 teaspoon spicy chili powder
12 - 1 teaspoon hot cayenne
13 - 3 tablespoons regular flour
14 - 4 cups chicken stock
15 - 2 (15-ounce) drained cans of great northern beans
16 - 1/2 pound cleaned shrimp, no shells or tails
17 - 1/2 cup thick cream

# How to Make It:

01 - Pour vegetable oil into a big pot over medium-high heat. Toss in chicken chunks and sausage slices. Stir now and then until chicken turns golden and cooks fully, around 5-7 minutes.
02 - Throw in chopped onion, celery, green pepper, and jalapeno. Keep stirring often while they cook down for about 5 minutes.
03 - Add crushed garlic, cumin powder, smoky paprika, chili powder, cayenne, and flour. Keep stirring non-stop for a minute or two.
04 - Slowly pour chicken stock while mixing. Add the drained beans. Let it bubble up, then turn down heat and cook for 10 minutes.
05 - Mix in the cleaned shrimp and thick cream. Let it cook 2-3 more minutes until shrimp turns pink. Serve it hot from the pot.
