Broccoli Cheddar Patties (Printable Version)

# What You'll Need:

→ Vegetables

01 - 2 cloves garlic, smashed up
02 - 1/2 medium onion, chopped up small
03 - 4 cups broccoli bits, cooked soft and chopped really fine

→ Dairy

04 - 1/2 cup Parmesan cheese, shredded or grated
05 - 1 cup sharp cheddar, grated

→ Binders

06 - 1/4 cup flour (regular or almond meal—your pick)
07 - 2 eggs, whisked

→ Seasoning and Oil

08 - Pinch salt and pepper
09 - Some olive oil for frying up

→ Optional Additions

10 - Breadcrumbs for some extra crunch if you like
11 - Fresh herbs like basil or parsley, or dash of cumin or paprika if you’re in the mood

# How to Make It:

01 - Plate up your patties warm. Dip in your favorite sauce or enjoy straight outta the pan as a snack, app, or side.
02 - Pan fry: Splash some olive oil in a pan on medium. Drop in the patties so they’ve got space. Let ’em sizzle for a few minutes each side till they look golden and crunchy. Move to a paper towel when they’re done. Want to bake instead? Set your oven to 190°C, lay out patties on a parchment-lined sheet, bake for 15–20 mins and flip about halfway through till they’re crisp.
03 - Scoop some mix and squish it into a patty, about as fat as your thumb and the width of your palm. Keep going til you’ve used up the mix.
04 - Throw in your cheese, flour or almond meal, those beaten eggs, onion, and garlic. Hit it with salt and pepper. Stir so it’s all stuck together.
05 - Chop the cooked broccoli fine using a knife or food processor—don’t turn it into paste. Toss it into a big bowl.
06 - Boil or steam those broccoli florets for several minutes til they’re soft. Drain off extra water and let cool a bit before handling.

# Additional Tips:

01 - Press patties nice and tight or they might crumble. Piling in too much cheese makes ’em fall apart.
02 - Almond meal or gluten-free flour keeps things wheat-free but still tasty.
03 - Splash in herbs or spice—chopped fresh parsley, a sprinkle of paprika, whatever adds a punch.
04 - Get rid of as much broccoli water as you can so patties stick together.
