Preheat the oven to 200°C. Lightly grease a mini muffin tin with cooking spray and set aside.

Combine melted butter (or oil), milk, and salt in a large saucepan over medium-high heat. Once the mixture begins to boil, immediately remove from heat and stir in the tapioca flour until fully blended.

Transfer the dough to a large mixing bowl. Add the eggs, minced garlic, grated parmesan, and shredded cheese.

Use a handheld or stand mixer to blend all ingredients until the dough is smooth and sticky.

Using two spoons dipped in water, scoop the dough into each cup of the mini muffin tin.

Sprinkle garlic powder or garlic salt over each portion. Optionally, add a pinch of dried thyme or rosemary on top.

Bake in the preheated oven for 15 to 20 minutes until golden brown. Remove from oven and let cool for a few minutes before removing from the tin. Serve warm.
