In a large bowl, mix ground beef, onion powder, garlic salt, salt, black pepper, minced onion, and chopped pickles until evenly incorporated.

Divide meat mixture into 24 equal portions. Cut cheese into 24 cubes approximately 1/2-inch square. Flatten each meat portion into a circle, place a cheese cube in the center, then roll the meat around the cheese to form a sealed ball.

Lightly brown each cheese-stuffed meatball in a large skillet over medium heat on all sides, taking care to maintain shape without cooking through.

On a lightly floured surface, roll thawed dough balls into circles slightly larger than meatballs. Place a meatball in the center and wrap dough around it, sealing the bottom by pinching the edges tightly.

Place wrapped dough bombs onto the prepared sheet pan. Brush the tops and sides with beaten egg and sprinkle generously with sesame seeds.
