Slice the tops off the bell peppers and remove seeds and membranes. Preheat oven to 190°C.

In a skillet over medium heat, cook ground beef until browned. Add finely chopped onion and minced garlic, and sauté until softened.

Stir cooked rice, tomato sauce, Italian seasoning, salt, and black pepper into the beef mixture. Simmer for 5 minutes to blend flavors.

Fill each hollowed pepper with the beef mixture. Arrange in a baking dish and cover with foil. Bake for 30 minutes.

Remove foil, sprinkle shredded cheddar cheese on top of each pepper, and continue baking uncovered for 10 to 15 minutes until cheese is melted and bubbly.

Allow stuffed peppers to rest for 5 minutes before serving. Optionally garnish with fresh parsley.
