Apple Cream Cake (Printable Version)

# What You'll Need:

01 - 1/4 cup granulated sugar
02 - 1/4 cup brown sugar, packed
03 - 1/3 cup unsalted butter, melted
04 - 1 teaspoon cinnamon powder
05 - 1/2 cup rolled oats
06 - 1/2 cup regular flour

→ Cinnamon Mix

07 - 1 1/2 teaspoons ground cinnamon
08 - 5 tablespoons brown sugar, firmly packed

→ Apple Layer

09 - 1 lb apples, peeled and chopped (Golden Delicious or Gala work best)
10 - 2 tablespoons granulated sugar
11 - 1 teaspoon ground cinnamon

→ Batter

12 - 1 1/2 teaspoons baking powder
13 - 1 1/2 cups plain flour
14 - 6 tablespoons butter at room temperature
15 - 2/3 cup white sugar
16 - 1 1/2 teaspoons vanilla extract
17 - 3/4 cup sour cream
18 - 2 large eggs at room temperature
19 - 1/2 teaspoon salt

→ Filling (Cream Cheese)

20 - 12 oz cream cheese, softened
21 - 1/3 cup sugar
22 - 1 teaspoon vanilla flavoring
23 - 1 large egg

→ Icing

24 - 2 tablespoons milk or cream
25 - 3/4 cup confectioners sugar
26 - 1/2 teaspoon vanilla

# How to Make It:

01 - Spray a 9-inch springform pan and line the bottom with parchment. Warm your oven to 350°F and drop the rack one level below center.
02 - Use a fork to mix rolled oats, regular flour, cinnamon powder, both types of sugar, and melted butter until small clumps form. Set aside for later.
03 - In a small dish, combine the cinnamon with packed brown sugar. Put aside until needed.
04 - Cut peeled apples into tiny chunks about 1/3 to 1/2 inch big. Toss them in a bowl with cinnamon and sugar. Keep handy.
05 - Combine salt, flour and baking powder in one bowl. In another bowl, beat room-temp butter with sugar and vanilla till fluffy, then add eggs one at a time. Mix in sour cream, then gradually add dry ingredients until just blended. Don't forget to scrape the bowl sides.
06 - Beat soft cream cheese with sugar and vanilla until creamy. Add the egg and mix only until combined. Set aside.
07 - Spread some batter in the pan base. Add half the apple chunks, pushing them in slightly. Dust with cinnamon mix. Pour cheese mixture over top but not all the way to edges. Add more apple bits and cinnamon mix. Top with remaining batter, smoothing it out, then finish with apples, cinnamon mix and crumble topping.
08 - Bake for 70-90 minutes. Check after 40-50 minutes and cover with foil if it's browning too fast. It's done when a toothpick comes out clean from the middle. Cool in the pan for 20-30 minutes before running a knife around the edge and removing the springform side.
09 - Mix confectioners sugar, vanilla and milk until smooth. Drizzle over the cooled cake. Store at room temp for a day or keep in the fridge up to a week.
