01 -
Peel the apples using an apple peeler, then cut each apple in half and slice into 1.25 cm (½ inch) wedges.
02 -
Combine the all-purpose flour, apple pie spice, and 4 tablespoons of cinnamon in a medium bowl.
03 -
Transfer the dry mixture to a large lidded container, add the apple wedges, secure the lid, and shake vigorously to coat all sides evenly.
04 -
Using a large slotted spoon, remove the apples from the container and gently shake off excess flour mixture. Place them on a plate to prepare for dredging.
05 -
In a separate bowl, whisk together the eggs and vanilla extract until smooth.
06 -
Dip a few apple wedges at a time into the egg mixture, ensuring they are fully coated.
07 -
Return the egg-coated apple wedges back into the remaining dry flour mixture inside the container. Shake thoroughly again to apply a second coating.
08 -
In a small bowl, mix the brown sugar and reserved 1 tablespoon of cinnamon. Set aside.
09 -
Spray the air fryer basket lightly with olive oil nonstick spray. Place coated apple fries in a single layer—cook in batches if necessary.
10 -
Spray the top-facing apples liberally with olive oil spray and sprinkle half of the cinnamon sugar mixture on top. Air fry at 175°C for 6 minutes.
11 -
Flip the apple fries, spray again with olive oil, sprinkle the remaining cinnamon sugar mixture, then air fry for an additional 6 minutes at 175°C.
12 -
Serve immediately, optionally drizzled with caramel sauce or a powdered sugar glaze.
