Slice each string cheese into three even chunks, giving you 18 cheese pieces total.

Put a cheese chunk at one edge of a wonton skin. Roll halfway, tuck in the sides, wet the far edge with water, and finish rolling snugly. Do this for all cheese pieces.

Warm oil on medium until it's hot enough. Drop in 4-5 cheese sticks at once, letting them fry for roughly a minute until they turn golden.

Let sticks rest on paper towels to soak up extra oil, add a pinch of salt if you want, and enjoy them hot with some pizza sauce on the side.
