# What You'll Need:

→ Salad

01 - 1 small seedless watermelon, diced into 1 inch chunks or scooped into balls
02 - 1 shallot, minced finely
03 - 4 tablespoons mint leaves torn up, with extra for topping
04 - 2 tablespoons olive oil
05 - Kosher salt and fresh ground black pepper as needed
06 - 1 sheet fresh feta cheese, diced into ½ inch squares (roughly ½ cup when cubed)
07 - 2 yellow peaches, cut into slices
08 - 3 Persian cucumbers, cut into ½ inch thick circles

→ Vinaigrette

09 - 4 tablespoons olive oil
10 - 3 tablespoons red wine vinegar
11 - 3 cloves garlic, minced
12 - 1 shallot, minced finely
13 - 1 teaspoon dried oregano
14 - Kosher salt and fresh ground black pepper as needed

# How to Make It:

01 - Mix the watermelon, shallots, and mint together in a big bowl with the olive oil. Add salt and pepper then stir everything up. Put it in the fridge to soak for at least 1 hour but you can leave it up to 3 hours.
02 - Take the watermelon mix out of the fridge and throw in the peach slices, feta cubes, and cucumbers. Gently toss everything together. Move it all to a nice serving dish.
03 - Grab a small bowl and mix all the vinaigrette stuff together. Pour this dressing over your salad and taste it. Add more seasoning if you want.
