Turn on your oven to 350ºF and give a 9x13-inch baking dish a light coat of cooking spray.

Grab a large skillet and cook your sausage on medium heat until it's fully browned. Make sure to drain off the extra grease.

Take a big bowl and mix your potato tots, cooked sausage, and both types of cheese together. Put this mixture into your greased baking dish.

In another bowl, beat the eggs and add milk, salt, pepper, garlic powder, and onion powder. Mix it all up well.

Pour your egg mixture right over the tot mixture in the dish, making sure it spreads evenly.

Stick it in your heated oven without covering it and let it bake for 60-70 minutes. You'll know it's done when the eggs aren't runny anymore.

If you want to make this ahead, you can keep it in the fridge or freezer. Just remember cooking time might change if it's cold or thawed.
