This airy Strawberry Angel Cake mixes fluffy angel food cake with juicy strawberries and fluffy whipped cream for a fancy yet simple sweet treat. It's just right for summer get-togethers, showing off natural sweetness while staying delightfully airy.

During our family's Mother's Day lunch, even my grandma who usually skips dessert ate a whole piece, saying how refreshing it was. The bright red berries next to the white layers make everyone think you're a pro baker.

Key Components

  • Angel food cake: Airy, thirsty foundation (1 from the store)
  • Fresh strawberries: The main attraction (2 lbs juicy ones)
  • Heavy cream: Fluffy topping (2 cups)
  • Granulated sugar: Softens the berries (3 tbsp)
  • Powdered sugar: Keeps cream firm (3 tbsp)

How To Make It

Step 1: Ready the strawberries
Cut berries into slices, mix with sugar, rest for 30 mins
Step 2: Make the cream
Whip cold cream with powdered sugar until soft peaks form
Step 3: Prepare the cake
Use a bread knife to cut into 3 layers across
Step 4: Build it up
Stack cake, strawberries with their juice, and whipped cream
Step 5: Top it off
Place leftover berries in a circle pattern on top

Stacking Method

Put cake, berries and cream in layers, letting the juices soak through. The spongy angel food drinks up flavor but stays firm. Try to put it all together no more than 2 hours before you'll eat it.

Ways To Enjoy

  • Add fresh mint leaves on top
  • Enjoy with a glass of bubbly
  • Serve alongside lemon ice
  • Bring extra strawberries to the table

I found out the hard way at a backyard party that whipped cream doesn't like hot weather. Now I mix in a bit of gelatin when serving outdoors, or keep it cold until right before eating.

What started as a basic dessert has turned into my go-to summer treat. That first taste of light cake, sweet berries, and creamy topping feels just like summer on a plate.

What You'll Need

→ Main Ingredients

01 1 ready-made angel food cake
02 2 pounds fresh strawberries, tops removed and cut into slices
03 1/4 cup white sugar
04 1 teaspoon pure vanilla flavoring
05 1 tub (8 ounces) whipped topping, defrosted

→ Optional Garnish

06 Extra fresh strawberries, whole or sliced
07 Sprigs of mint
08 Fine sugar for sprinkling

How to Make It

Step 01

Mix sliced strawberries, sugar, and vanilla in a bowl. Stir carefully to coat all the berries. Set aside for 15-20 minutes so the strawberries start to get juicy.

Step 02

Take a bread knife and cut the angel food cake into three flat, even rounds.

Step 03

Put the bottom cake round on your serving dish. Spoon about 1/3 of your juicy strawberry mix over it. Then smooth about 1/3 of the whipped topping on top.

Step 04

Put the middle cake round on next. Add another 1/3 of your strawberry mixture, then another 1/3 of your whipped topping.

Step 05

Top with the final cake round. Pour the rest of your strawberry mix over it, letting some juice run down the sides. Spread the last bit of whipped topping on top.

Step 06

Pop the cake in the fridge for at least 2 hours but you can leave it up to 24 hours so the cake soaks up all those tasty strawberry juices.

Step 07

Just before you serve it, add some extra strawberries and mint if you want. A light dusting of fine sugar makes it look fancy.

Additional Tips

  1. Serve this treat cold - you can make it a day ahead if you're planning for guests.
  2. Want to make it look extra special? Cut individual slices and add more strawberries and topping on each plate.
  3. Feel free to use less or more sugar depending on how sweet your strawberries are and what you like.
