01 - 1 pound steak, diced into small chunks
02 - 1 tablespoon olive oil
03 - 1 medium onion, chopped
04 - 2 cloves garlic, crushed
05 - 1 cup uncooked long-grain rice
06 - 2 cups beef broth
07 - 1 cup grated cheddar cheese
08 - Salt, as needed
09 - Pepper, as needed
10 - 1 teaspoon dried thyme
11 - 1 teaspoon paprika
12 - 2 tablespoons fresh parsley, snipped

# How to Make It:

01 - Warm the olive oil in a big skillet over medium-high heat. Toss in the steak chunks and brown them all over. Take the meat out and put it aside.
02 - Using the same pan, toss in your chopped onion and cook until it turns clear, around 5 minutes. Drop in the crushed garlic and let it cook one more minute until you can smell it.
03 - Add your uncooked rice, beef broth, thyme, and paprika to the pan. Let it come to a boil.
04 - Turn the heat down low, put a lid on it, and let everything bubble gently for 15-20 minutes. You'll know it's done when the rice is soft and all the liquid's gone.
05 - Put the browned steak back in and add your grated cheese. Stir it all up until the cheese melts and everything's mixed well.
06 - Throw in some salt and pepper how you like it, and sprinkle the snipped parsley on top before you serve it.

01 - Try swapping the steak for ground beef or chicken if you want. Tossing in some chopped bell peppers or mushrooms makes it tastier. If you like it hot, add some red pepper flakes or a chopped jalapeño.
