One-Pot Chicken Rice (Printable Version)

01 - 1 ½ pounds boneless, skinless chicken parts (thighs or breasts)
02 - 4 ½ to 5 ½ cups low-sodium chicken stock
03 - 1 small diced shallot (roughly 1/4 cup; can swap with half a small regular onion)
04 - 1 cup long-grain brown rice (white, instant or short-grain won't work)
05 - 1 ½ cups diced carrots (roughly 4 medium carrots)
06 - ¼ teaspoon ground black pepper
07 - 1 ½ teaspoons garlic powder
08 - ½ teaspoon kosher salt
09 - 1 teaspoon dried thyme
10 - 1 tablespoon Dijon mustard
11 - ½ cup plain nonfat Greek yogurt
12 - 1 cup frozen peas (straight from freezer)
13 - ½ cup freshly grated sharp cheddar (white works best, split into two parts)
14 - Chopped fresh parsley (for garnish if desired)

# How to Make It:

01 - Rinse the rice thoroughly to get rid of excess starch. Bring 2 cups of chicken stock to a boil, add the rice, and cook for about 10 minutes until halfway done. Drain thoroughly.
02 - Coat a 5-quart or larger slow cooker with nonstick spray. Add carrots, shallot, partially cooked rice, and Dijon mustard. Stir together, then place chicken on top. Scatter garlic powder, thyme, salt, and pepper over the chicken. Pour in 2 ½ cups of chicken stock.
03 - Put the lid on and set to HIGH. Cook for 1 ½ to 2 hours until chicken is fully cooked.
04 - Remove chicken and keep it warm under cover. Mix the stock, vegetables, and rice in the slow cooker. Cover again and cook on HIGH for another 60-90 minutes until rice softens. Add more stock if mixture looks dry.
05 - Take off the lid and stir in the frozen peas and Greek yogurt. Chop chicken into bite-sized pieces, mix back in, then fold in 1/4 cup of cheddar.
06 - Scatter remaining cheese on top, cover, and cook on HIGH just long enough for cheese to melt. Dish out onto plates and top with fresh parsley if you want.

01 - Older or unwashed rice might need more cooking time, so you'll need to adjust based on how your slow cooker performs.
