Grab a small bowl and stir together the oil, soy sauce, vinegar, mustard, minced garlic, and all your dried herbs with the salt and pepper until smooth.

Toss your pork into a big ziplock bag or flat container. Pour your flavor mix all over it, making sure it's totally covered. Zip it up or put a lid on it and stick it in the fridge for at least 2 hours, but leaving it overnight works even better.

Turn your oven on to 375°F (190°C) and let it warm up.

Take the pork out of its marinade bath and put it in your roasting pan. Just throw away whatever marinade is left.

Stick the pork in your hot oven and let it cook for about 45-60 minutes. You'll know it's done when the inside hits 145°F (63°C).

Pull it out and don't cut it right away. Let it sit for 10 minutes first, then slice it up and dig in!
