03 - 1/4 teaspoon salt
04 - 3/4 cup soft unsalted butter
05 - 1 cup white sugar
06 - 1 large egg
07 - 2 tablespoons fresh lemon juice
08 - 1 tablespoon grated lemon peel
09 - 1/2 cup finely diced raspberries

→ Raspberry Glaze

10 - 1 cup confectioners sugar
11 - 2 tablespoons mashed raspberries
12 - 1 teaspoon lemon juice

# How to Make It:

01 - Set your oven to 350°F (175°C). Put parchment paper on your cookie sheet.
02 - Stir flour, baking powder, and salt together in a mixing bowl.
03 - Using another bowl, beat butter and sugar till fluffy. Add in the egg, lemon juice, and grated lemon peel.
04 - Slowly stir in your flour mixture until dough forms. Gently fold your chopped raspberries into the mix.
05 - Spoon dough onto your lined baking sheet with about 2 inches (5 cm) between each. Bake until edges turn golden, about 12-15 minutes.
06 - Leave cookies on the hot tray for 5 minutes, then move them to a wire rack to finish cooling.
07 - Mix confectioners sugar, mashed raspberries, and lemon juice in a bowl until it's smooth.
08 - Pour the berry mixture over your cooled cookies and add some extra lemon zest on top. Wait until topping hardens before eating.

# Additional Tips:

01 - Make sure your butter isn't cold when you start mixing.
02 - Try adding a bit of raspberry extract to make the berry flavor stronger.
03 - Grate your lemon peel very small so it mixes well throughout the dough.
04 - Don't glaze the cookies while they're warm or your topping will run off.
