Savory Jamaican Patties (Printable Version)

# What You'll Need:

→ Dough

01 - 2 ½ cups flour (all-purpose)
02 - 1 tsp salt
03 - 1 tsp turmeric
04 - ½ cup butter (cold and cubed)
05 - ½ cup cold shortening
06 - ½ cup water (ice-cold)

→ Filling

07 - 1 lb beef (ground)
08 - 1 small onion, chopped finely
09 - 2 cloves garlic, minced
10 - 1 tsp thyme
11 - 1 tsp allspice
12 - ½ tsp cayenne pepper, if you want
13 - ½ tsp pepper (black)
14 - 1 tsp salt
15 - 1 tbsp soy sauce
16 - ½ cup breadcrumbs
17 - ½ cup beef broth
18 - 1 tbsp curry powder
19 - 1 egg for washing

# How to Make It:

01 - Combine flour, salt, and turmeric in a bowl. Work the butter and shortening into the mixture until it looks like coarse crumbs. Slowly pour in the ice-cold water while mixing until it forms a ball. Cover with plastic and chill for 30 minutes.
02 - Brown the ground beef in a pan on medium heat. Toss in onion, garlic, thyme, allspice, cayenne, black pepper, and salt. Add soy sauce, curry powder, and broth. Let it bubble for 10 minutes. Stir breadcrumbs in and cook till it gets thick. Set aside to cool down.
03 - Heat your oven to 375°F (190°C). Flatten dough and cut into 6-inch rounds. Put 2 tbsp filling on half of each circle, fold the empty side over, and press edges with a fork. Brush the tops with beaten egg.
04 - Put your patties on a lined baking tray. Stick them in the oven for 20-25 minutes until they turn golden.

# Additional Tips:

01 - Want a super flaky crust? Make sure your butter and shortening are really cold. Don't handle the dough too much or you'll lose that nice tender bite.
02 - You can put in more or less cayenne depending on how spicy you like things. For a truly Caribbean kick, try adding a bit of Scotch bonnet pepper.
03 - You can keep cooked patties in your fridge for up to 3 days. Or you can freeze them uncooked for up to 3 months. When you're ready, bake frozen ones at 375°F for 30-35 minutes.
