Keep the skin on and cut the cucumber into rounds about ¼ inch thick using a good knife or mandoline.

Toss cucumber slices into a bowl or jar. Finely chop the red onion and jalapeno, then add them to your cucumbers.

Drop in your herbed cream cheese, sour cream or yogurt, garlic powder, smoky paprika, sea salt, and cheddar. Add a tiny splash of soy sauce if you're feeling fancy.

Mix it all together in your bowl until well combined. If you went with a jar, just put the lid on tight and give it a good shake.
