Heat your oven to 400°F. Spray a regular muffin tin with non-stick spray or put in paper liners and spray those too.

Grab a bowl and stir together both flours, baking powder, baking soda, salt, sugar, the currants or raisins, and the caraway seeds.

In another bowl, beat the egg, then mix in the buttermilk and melted butter until well combined.

Pour the wet stuff into the dry stuff. Fold them together just until everything's damp. Don't stir too much or your muffins will turn out hard.

Scoop the thick batter into your muffin cups until they're about 3/4 full. The batter will look puffy. Sprinkle some sparkling sugar on top.

Stick them in the oven for 20 minutes or until a toothpick comes out clean when poked in the middle. After they're done, tilt the muffins in their cups so they don't get soggy bottoms.

Wait 5 minutes, then move the muffins to a wire rack to finish cooling. Eat them plain or with some butter or jam.
