Soda Bread Treats (Printable Version)

# What You'll Need:

→ Dry Mix

01 - 1 1/2 cups (180g) regular white flour
02 - 3/4 cup (85g) golden wheat flour or Irish-style flour
03 - 2 teaspoons baking powder
04 - 1/4 teaspoon baking soda
05 - 1/2 teaspoon table salt
06 - 1/3 cup (74g) white sugar
07 - 1 1/4 cups (177g) currants or 1 1/4 cups (186g) raisins, currants work better
08 - 1/2 to 2 teaspoons caraway seeds, based on your taste

→ Wet Mix

09 - 1 large egg
10 - 1 cup (227g) buttermilk, yogurt, or sour cream
11 - 6 tablespoons (85g) melted butter; or 1/3 cup (67g) cooking oil

→ Finishing Touch

12 - Chunky sparkling sugar for the tops

# How to Make It:

01 - Heat your oven to 400°F. Spray a regular muffin tin with non-stick spray or put in paper liners and spray those too.
02 - Grab a bowl and stir together both flours, baking powder, baking soda, salt, sugar, the currants or raisins, and the caraway seeds.
03 - In another bowl, beat the egg, then mix in the buttermilk and melted butter until well combined.
04 - Pour the wet stuff into the dry stuff. Fold them together just until everything's damp. Don't stir too much or your muffins will turn out hard.
05 - Scoop the thick batter into your muffin cups until they're about 3/4 full. The batter will look puffy. Sprinkle some sparkling sugar on top.
06 - Stick them in the oven for 20 minutes or until a toothpick comes out clean when poked in the middle. After they're done, tilt the muffins in their cups so they don't get soggy bottoms.
07 - Wait 5 minutes, then move the muffins to a wire rack to finish cooling. Eat them plain or with some butter or jam.

01 - Don't mix too much or you'll end up with tough muffins.
02 - Tilt your finished muffins in the pan to keep the bottoms crisp.
