01 - 1 pound bow tie pasta
02 - 1 tablespoon extra virgin oil
03 - 1 pound hot or sweet Italian sausage
04 - salt and black pepper
05 - 1 vidalia onion, chopped
06 - 4 cloves garlic, finely chopped
07 - 1 pound fresh asparagus, cut in three parts
08 - ⅔ cup reserved pasta cooking liquid
09 - ½ cup grated parm cheese
10 - 8 ounces soft burrata
11 - red pepper flakes, optional topping

# How to Make It:

01 - Fill a large pot with water, add salt, and heat until bubbling. Cook bow ties following package instructions. Save 1 cup of the cooking water before draining.
02 - While waiting for water to boil, warm oil in a large skillet over medium flame. Drop in sausage, sprinkle with salt and pepper, and cook until crispy and broken into chunks. Move it to a dish.
03 - Toss onions and garlic into the same pan with a dash of salt and pepper. Let them cook about 5 minutes, stirring frequently.
04 - Put asparagus pieces in with the onions. Stir often while cooking until soft, roughly 6 to 8 minutes. Add another sprinkle of salt and pepper.
05 - Drop the drained pasta into your pan. Pour in ⅔ cup of the saved pasta water. Mix in the grated parm until everything's nicely blended.
06 - Break the burrata into pieces and mix through the pasta. Sprinkle red pepper flakes on top and eat right away.
