Slow-cooked Chicken Chili (Printable Version)

# What You'll Need:

01 - 1 lb chicken breasts without bones or skin, fat bits removed
02 - 1 yellow onion, chopped into small squares
03 - 2 garlic cloves, finely chopped
04 - 24 oz low-salt chicken stock
05 - 2 cans (15 oz each) great Northern beans, washed and drained
06 - 2 cans (4 oz each) chopped green chilies (one spicy, one mild)
07 - 1 can (15 oz) corn kernels, drained well
08 - 1 tsp salt
09 - 1/2 tsp ground black pepper
10 - 1 tsp cumin powder
11 - 3/4 tsp dried oregano
12 - 1/2 tsp chili powder
13 - 1/4 tsp cayenne pepper
14 - Fresh cilantro, just a few sprigs chopped up
15 - 4 oz light cream cheese, brought to room temp
16 - 1/4 cup half and half

# How to Make It:

01 - Place chicken at the bottom of your slow cooker. Sprinkle with salt, pepper, cumin, oregano, chili powder, and cayenne. Throw in chopped onion, garlic, beans, chilies, corn, broth, and cilantro. Give it a good mix.
02 - Put the lid on and cook for 8 hours on LOW setting or 3-4 hours if using HIGH.
03 - Take out chicken pieces and put them in a bowl. Pull apart with two forks until shredded. Put the meat back into the slow cooker.
04 - Drop in cream cheese and pour half and half into the mix. Stir everything together, cover again, and cook on HIGH for 15 more minutes until it's creamy and a bit thicker.
05 - For a smoother result, mix soft cream cheese in a small bowl with some hot liquid from the pot. Whisk until it's totally smooth, then pour back into the cooker before adding the half and half.
06 - Mix well and dish up hot with any toppings you like - maybe some jalapeños, avocado chunks, a dollop of sour cream, crunchy tortilla bits, or some cheese on top.

# Additional Tips:

01 - Need a thicker chili? Just mix 1 tbsp cornstarch with 2-3 tbsp liquid (milk, half and half, broth, or even water). Stir it in and cook until it's as thick as you want.
