Turn your oven to 375°F (190°C). Put some parchment on your cookie sheet or give it a light coating of oil.

Open up the croissant pastry and pull apart each triangle piece.

Grab a bowl and throw in your crab, cream cheese, cheddar, mayo, brown mustard, lemon juice, garlic, and pepper. Stir it all together until it's smooth.

Drop a big spoonful of crab mix on the fat end of each triangle. Roll them up from the wide part to the pointy tip, pinching the sides closed as you go.

Put your stuffed croissants on the cookie sheet with room between them.

Stick them in the oven for 12-15 minutes until they turn nice and golden with crispy edges.

Pull them out and let them sit for a bit. Sprinkle some parsley on top if you like, and serve them while they're still warm.
