Grab a big non-stick pan and brown the breakfast sausage until fully cooked. Move the cooked meat to a bowl lined with paper towels. Clean the pan with a paper towel when done.

Using the same pan, drop in 2 tablespoons of butter over medium-high heat. Add your whisked eggs. When they start to firm up, stir them gently until almost completely set. Take the pan off the heat.

Take out the paper towel under the sausage but keep the meat in the bowl. Add your scrambled eggs to the sausage and mix them lightly. Wipe down the pan again and warm it on medium heat.

Spread butter on one side of each bread slice. Put a slice in the pan with the buttered side down. Add a cheese slice on top. Spoon about 1/2 cup of the egg-sausage mix over the cheese. Top with another cheese slice, then add another bread slice with the butter facing up.

Let the sandwich cook until the bottom turns golden, around 3-4 minutes. Flip it carefully and brown the other side too.

Move the sandwich to a cutting board and slice it in half if you want. Do the same steps for the leftover ingredients. Eat while hot.
