# What You'll Need:

01 - 2 cups regular flour
02 - 1/4 cup white sugar or alternative sweetener
03 - 4 teaspoons baking powder
04 - 1/4 teaspoon baking soda
05 - 1/2 teaspoon salt
06 - 1 3/4 cups milk
07 - 1/4 cup butter
08 - 2 teaspoons natural vanilla extract
09 - 1 large egg

# How to Make It:

01 - Throw the flour, sugar, baking powder, baking soda, and salt together in a big bowl.
02 - Create a hole in the middle of your dry mix and pour in milk, melted butter, vanilla, and the egg. First stir up just the wet things, then slowly mix everything together until it's smooth. Your batter should end up thick but pourable. If it seems too thick, just add a splash more milk.
03 - Give your batter a short break while you warm up your cooking surface.
04 - Get a non-stick pan going on medium-low heat and brush it with a bit of butter. Pour about 1/4 cup batter on the hot surface and let it spread into a circle. When you see bubbles popping up and the bottom turns golden, flip it over. Cook the other side until it's golden too. Keep going until all the batter is used up.
05 - Top your pancakes with whatever you like - honey, maple syrup, fresh fruit, a scoop of ice cream, yogurt, or just eat them plain.

# Additional Tips:

01 - Want super fluffy pancakes? Add a touch of baking soda, but skip it if you don't like the taste. If you're using self-raising flour instead, cut back on the baking powder to just 1 teaspoon per cup of flour and leave out the baking soda entirely.
02 - Use a measuring cup to make sure all your pancakes come out the same size. A 1/4 or 1/3 cup works great for each pancake.
03 - Aussies can swap in self-raising flour if that's what you've got in the pantry.
