Grilled Bacon Chicken Skewers (Printable Version)

# What You'll Need:

→ Main Ingredients

01 - 2 big chicken breasts, diced into chunks about 1.5 to 2 inches, with a light salt sprinkle
02 - 1 ½ cups barbecue sauce
03 - 1 pound bacon, chopped into 1 to 1.5-inch pieces
04 - Chunks of fresh pineapple, cut roughly 2 inches big

# How to Make It:

01 - Mix your chicken chunks with a cup of barbecue sauce and let them soak for 2-3 hours. You can skip soaking if you're in a hurry.
02 - Pop the bacon in your microwave for 2-5 minutes till it's halfway done. The time needed changes with how thick it is and how crispy you want it. Let it cool a bit.
03 - Stick chicken, bacon and pineapple onto wet wooden or metal skewers. Mix up the order as you go. Bend bacon bits in half and place them beside chicken chunks, leaving gaps so heat can flow around everything.
04 - Grill until chicken hits 155-160°F inside. Brush the leftover ½ cup barbecue sauce on during the last few minutes of cooking. After grilling, cover them loosely with foil and wait 5-10 minutes before eating.

# Additional Tips:

01 - Wooden skewers need a good soak in water for at least an hour so they won't burn up.
02 - Any leftovers should go in a sealed container and be eaten within 5 days.
